To make cheese, you basically cook milk. With some stuff in it that makes it into cheese. It’s a bit weird and you probably don’t want to know the details unless you’re planning to make cheese at home, yourself. And then, when you have sort of soft, squishy cheese, you press it under a heavy weight for a long time. And then you wax it, and keep it in the fridge. Here’s the cheddar in it’s red-wax coating!
